Dyson Spheres are -enormous-. One 1 AU in diameter would be about 550 million times the surface area of Earth. Lots of possibilities!

We s aw some of those possibilities in your THE LORDS OF CREATION. Entire civilizations could rise and fall in the Dyson sphere in your story without ever being aware of each other. Or other hominin species like the Neanderthals could be living there.

You can spin them to create gravity at the equator, and then put 'knobs' on the poles to keep it uniform, too.

I like that idea! I don't think our current level of technology would allow us to build Dyson spheres--but we should certainly be building rotating ring habitats with artificial levels of gravity for different rings. It's frustrating that the US has not. Sick of the ludicrously tiny and antiquated ISS!
